Bluefish in Foil

• Put bluefish fillet on a piece of tin foil
• Add salt, black pepper, and basil to taste
• Put slices of tomato, onion, and green pepper on the fillet
• Seal up the tinfoil completely
• Place the foil pouch of bluefish directly on the barbeque grill
• Cover the grill and cook at medium heat for 20 minutes
• Do not turn the pouch over
• Open the pouch and transfer the moist bluefish to a plate with a spatula
• Flake off the dark meat with a fork prior to eating.

* Oven Method: Same as above, but place foil pouch in a baking pan and cook for 25 minutes at 350 degrees *

Grilled Striped Bass

• Place Striped Bass fillet, dark meat side down, on a piece of tin foil
• Put pats of butter on the fillet
• Sprinkle fillet with salt, black pepper, and basil to taste
• Place the fillet and tin foil on the grill
• Cover the gas grill and cook on medium high setting for 25 minutes
• Do not turn the fillet
• Flake off the dark meat with a fork prior to eating

* For a Cajun flair, replace the salt, black pepper, and basil with Cajun spices *
