Capt. Jack’s Italian Black Sea Bass

            In a Sauce Pan add:
                1 can of (Cento) White Clam Sauce
                1 can of Chicken Broth
                1/2 teaspoon    Red Pepper Flakes
                2   teaspoons      Dried Basil
                1   tablespoon    Butter
            Bring to a boil
           

                Add 2 – 4 chunked fillets of Black Sea Bass

 

                Cook for 5 minutes
 

            Pour over 1 pound of cooked Angel Hair Pasta

 

            Sprinkle with Romano cheese       

Bluefish in Foil

Put bluefish fillet on a piece of tin foil

Add salt, black pepper, and basil to taste

Put slices of tomato, onion, and green pepper on the fillet

Seal up the tinfoil completely

Place the foil pouch of bluefish directly on the barbecue grill

Cover the grill and cook at medium heat for 20 minutes

Do not turn the pouch over

Open the pouch and transfer the moist bluefish to a plate with a spatula

Flake off the dark meat with a fork prior to eating.

* Oven Method: Same as above, but place foil pouch in a baking pan and cook for 25 minutes at 350 degrees *

Grilled Striped Bass

Place Striped Bass fillet, dark meat side down, on a piece of tin foil

Put pats of butter on the fillet

Sprinkle fillet with salt, black pepper, and basil to taste

Place the fillet and tin foil on the grill

Cover the gas grill and cook on medium high setting for 25 minutes

Do not turn the fillet

Flake off the dark meat with a fork prior to eating

* For a Cajun flair, replace the salt, black pepper, and basil with Cajun spices *
